Cheese Tarts

Cheese tarts are amazing desserts. They have a kinda tangy and creaminess that keeps you craving for more. There are man types of cheese tarts you can make but today I'm going with the classic Blueberry/Nutella Cheese Tarts.

We'll start of with the tarts. For the tarts I've used pre-baked ones because they save time. But if you prefer making them from scratch it would be preferable you do it a day before and here's the way to it. 

You'll need:

* 200g butter
* 70g sugar
* 125g flour
* 1 egg

Method:

-Beat  the butter and sugar until they become fluffy. Then slowly add in the egg. It doesn't matter if the butter you use is room temperature or cold ones but if its room temperature it would be easier to work with them.
-Next, shift in the flour until the buttery mixture firms up. Take the mixture out and knead them. Cover and place them in the fridge to allow them to set.
- After taking them out, roll the dough and use a cookie cutter to cut them in circles. Make sure the thickness of the dough is the same so that they can bake evenly. 
-Preheat the oven to 200º C and bake it about 10-15 minutes or until they turn golden brown. Once baked, set them aside to cool before popping them into the fridge.

Let's move on to the filling. You'll need:

*200g cream cheese
* 25ml whipping cream
* 50g sugar
* 1 egg
* 1 tbsp lemon juice
*Blueberry jam/ Nutella

Method:

- Beat the cream cheese together with the whipping cream and sugar until they turn fluffy.
- Slowly add in the egg and sugar
- Finally add in the lemon juice. You can taste the batter to see if you like it or not. You may add more sugar to sweeten the batter or more lemon juice to get a more tangy flavour.

Now let's assemble them together. 

Grab the tart shell and put a bit of the creamy cheese mixture in it. Then put in the filling of your choice. You may use any type of jam as your filling. And the top it with more cheese mixture. Try not to over-fill you tarts.Do the same with every tarts. Pop them into the oven at 150º C for about 20 minutes. You don't have to over bake it because we're not cooking the filling. Once baked for a bit, bring it out and let it cool before popping them into the fridge.
